Café Latte is a cafeteria style restaurant serving American food and homemade desserts.

Challenge

Café Latte’s owners, Peter and Linda Quinn, wanted to find options for better managing their waste. They contacted one of BizRecycling’s Recycling Experts for help.

How We Helped

Our Recycling Expert met with the Quinns to learn about their waste stream and come up with a plan for a new recycling program. 

One major source of waste that could be recycled was milk, juice and tea cartons.

Food scraps and other organic waste was another source of waste that could be recycled through composting. Our Recycling Expert connected Café Latte with Sanimax, a startup grease hauling company that had recently begun a commercial composting program in the Twin Cities Metro area.

Outcome

Café Latte and Sanimax worked through some contracting negotiations and reached a commercial composting agreement. Working with our Recycling Experts, Café Latte created signs to help direct employees on what to collect for composting.

Peter Quinn was impressed with how staff adapted to the changes. “Rather than complaining about having to separate items, staff were excited for the program,” said Quinn.

Café Latte’s new commercial composting program has reduced trash output by 75 percent. They now divert about 200,000 pounds of organic material every year, which is saving the restaurant over $1200 annually on trash hauling costs. 

Peter and Linda Quinn are not only satisfied with the savings but are glad the program has been well-received by both employees and customers.
